The Argus, located in the dining room of the 1930’s Mineral Springs Hotel, is exactly how I imagine my perfect country restaurant to be with locally grown food, a sophisticated fit-out and a talented chef in the kitchen.
The team behind The Argus own two farms in the area that harvest over 200 varieties of heirloom vegetables and maintain rare breeds including a Hampshire Lamb, Scottish Highland and British White cattle. On the day we visited, we ate from the Birch Estate lunchtime menu which included an in-house chicken liver parfait that was absolutely killer bee, a tender roast chicken with heirloom carrots and finished off with a locally made grappa.
The Argus embodies a sophisticated, country-luxury experience with leather banquettes, comfortable chairs and good service. One to look out for on your next trip to the Daylesford-Hepburn region in Victoria.
