Paramount Coffee Project is a cooperative venture from two serious coffee operators Russell Beard (Reuben Hills) and Mark Dundon (Seven Seeds). Located in the beautifully renovated Paramount Pictures building, the stylish fit out is complemented by a real commitment to coffee. Filter, cold drip and espresso are supported by an interesting menu making this a popular weekend brunch destination. It is worth noting that head barista Dylan (pictured above) won the 2014 Australian Aeropress championship for his skills with that brewing method which he shares with us here.
